Description
Complex and very dry, with an intriguing berry aroma. Mildly tannic. Red berries
with enticing aromas and bright, buoyant fruit on the palate.
Fruit
We use wild blueberries grown in Northern Maine.
Winemaking
Whole blueberries are placed into open top fermention tanks and fermented with their skins
until the desired color and tannins are extracted. At about 3 brix residual sugar, we press off the
blueberry juice and complete fermentation in stainless steel tanks. The wine is
transferred to American oak barrels for 12 to 18 months. It is then blended and bottled dry.
Aging
This wine ages well in the bottle for 3-5 years. We have sampled bottles as old
as 12 years from our library that still showed signs of life but not the same as
the younger wine.
Food Pairings and Serving Suggestions
Complements red meats, turkey, game and strong cheeses. Serve at room
temperature.
