Description
Rich and velvety with a clean, refreshing finish. Deep yellow and medium-bodied. Mild sweetness and richly textured, with assertive peach aromas.

    Fruit
    Various varieties of peaches are used from our own and other local orchards

    Winemaking
    The peaches are pitted with a very noisy machine and the resulting slurp is fermented as we would ferment a red wine, but the juice is removed as soon as we get good separation in the fermenting tank. The remainder of the must (resembling butterscotch pudding) is pressed in our tank press. The two fractions are reunited to complete their fermentation and aging in stainless steel tanks. The wine is bottled with about 10% residual reducing sugar.



    Food Pairings and Serving Suggestions
    Excellent with gingerbread, pumpkin pie and vanilla ice cream. Serve chilled.
