  • 1999 - 84 points - World Wine Championship

    Fruit
A blend of local apples and European elderberries are used.

    Winemaking
Elderberries are added to fermenting cider then scooped out when the desired color and flavor extraction have been obtained. We distill the elderberries to produce a kind of grappa. The wine is aged in oak barrels for 6 months to a year, then bottled with less than 1% residual reducing sugar.

    Aging
This wine ages well in the bottle for 3-5 years but is quite drinkable soon after bottling.

    Food Pairings and Serving Suggestions
Perfect with pasta and duck. Serve at room temperature.
