    Fruit
    Damson plums have a particularly intense color and flavor perfect for our wine.

    Winemaking
    Plums are purchased pitted or are depitted here in our noisy peach pitter. Fermented on the skins to extract color and flavor and then pressed. After finishing fermentation, it is aged in stainless steel tanks. The wine is bottled with 10-12% residual reducing sugar.



    Aging
    This wine is ready to drink at time of bottling, but will age well for 2-3 years.

    Food Pairings and Serving Suggestions
    Serve as an aperitif or with chocolate desserts. Serve chilled.
