St Croix produces a sweet bluish-red grape that makes an excellent grape for a northern red wine.St Croix makes a medium to full-bodied, dry, deep red wine with soft tannins and good fruit aromas, with currant and other dried fruit flavor qualities.

Fruit

St Croix produces a sweet bluish-red grape that makes an excellent red wine. Very winter hardy vines with little or no winter injury, vigorous growth and good resistance to powdery mildew and black rot. Be sure not to pick the grapes before they are fully ripe, or you will miss out on full flavor- watch for fruit to turn a darker color. St Croix makes a medium to full-bodied, dry, deep red wine with soft tannins and good fruit aromas, with currant and other dried fruit flavor qualities.

Winemaking

Fermented with D254 our second harvest of St. Croix produced about 1.5 tons of grapes. The grapes were destemmed and whole berry fermented using Lavin D254 yeast over a 16 day period. Pressed at 2 brixs the wine was eventaully put into American Oak barrels for 18 months.

Aging

This wine is best consumed young but ages well for 1-2 years.
